How can you best sweeten your day?
You can find many possibilitys but one of them you can create pancakes.
One of the best are my oatmeal-banana-pancakes with a lot of heathy ingredients. They fill you up for a long time.
For the topping you can use a lot of delicious things. In this recipe I had compinated with a banana-lime-puree, cherrys, peanuts, nutella and peanutbutter.
Ingredients:
- 1 banana

- 30 g oatmeal
- 1 egg
- 30 ml water
For the topping
- 1 banana
- 1/2 – 1 lime
- peanuts
- cherrys or other fruits
Preparation:
- At first squeeze one banana into a puree. I like it if you have small pieces of fresh banana.
- Beat the egg and fill up with water and oatmeal. Mix the ingredients together.
- Let the mass rest for 30 minutes.
- In the meantime you can chop up the peanuts and roast in a pan.
- Futhermore you can squeeze the second banana and mix it togheter with the juice of a half lime.
- After the rest periode of the mass, you can heat a pan and fry 4 pancakes in it.
- Fry each side for about 2 – 3 minutes.
- Sprinkle two pancakes each with nutella and peanut butter.
- Layer the pancakes on top of each other and on the top of them distribute the banana-lime puree.
- Decorate the pancakes with the roasted peanuts and cherrys.
- Enjoy your pancakes still warm.
