Cauliflower pizza

On my way back to Germany I discovered at the womans health magazine a very interesting receipt.

A cauliflower pizza!

At any time you can read about healthy food, low carb receibs, no suggar products…

Now the spring has started and the beach body is waiting. So it’s the best time for cooking low fat, low carb food without meat.

It’s my first time to cook pizza only from vegetables. The ingredients are very simple and not expensive. For the pizza topping I used other vegetables that the recipe dictates and it was very delicious.

Ingredients

  • 1 cauliflower
  • 70 g ground almonds
  • 1 tablespoons flour
  • Salt
  • Pepper
  • Thyme
  • 3 eggs
  • Pesto
  • Tomato paste
  • Brussel sprouts
  • Tomatos
  • Sun-dried tomatos
  • Rucola
  • Artichokes

Preparation

  1. Wash and shred the cauliflower into small pieces so that it has the consistency like rice
  2. Mix the cauliflower, the ground almonds, flour, salt, pepper, thyme and the eggs together
  3. Form the mass into a flat dough and back the dough for 20 minutes
  4. Spread one half of the baked dough with pesto, the other half with tomato paste.
  5. Cover the halves with Brussel sprouts, tomatos and artichokes and bake the pizza for another 12 – 15 minutes
  6. After this spread the pizza with sun-dried tomatos and rucola and serve the pizza warm.

Of course you can also choose your own ingredients for the topping. Depending on the season you could use different vegetables or vary in pesto.
