Mango-mint salad

I love the time where you can eat a lot of fresh and very delicious food. I discovered this suggestion from an internet cooking blog and had to try this combination. The weather is wonderful and on my balcony the mint sprouts like crazy.

I don’t thougt it before, but the combination mango and mint are very fresh and delicious.

This salad is good for warm and wonderful summer days. Hot sweet potatos are a good variety to cold mango-mint salad.

Try it for yourself and let yourself be suprised.

Ingredients:

  • 1 mango
  • 20 g mint
  • 1 lime
  • 1 chili
  • 6 tbsp olive oil
  • salt, pepper and sugar
  • 1 sweet potato
  • garlic powder
  • paprika powder

Preparation:

  1. Cut the mango into small pieces, wash the mint and cut it into small pieces too. Half the lime and squeeze the juice. Wash the chili, half the chili, core and cut into small stripes.
  2. Mix two-thirds of lime juice, 2 tsp oil, mint, mango, chili, salt, pepper and sugar together and let it pass for a while.
  3. Peel the sweet potato, cut the potato in stribes and mix it with 4 tsp oil, cili, sugar, salt, pepper, garlic and paprika powder.
  4. Roast the sweet potato for 10 – 15 minutes and turn it around regulary.
  5. Put the warm sweet potatos with the mango-mint-salad on a plate and enjoy the fresh taste.

Matching the season, there was still green asparagus. Simply sauté briefly with sugar, lime juice and oil.

The essential oils in fresh mint creat a pleasent cool feeling in the mouth, especially in the summer. The menthol in mint is super healthy. It has an antispasmodic and soothing effect.

The great: Mint is available throughout the year in the pot or package to buy. Why do not put a potty on the windowsill right now?
