Usually I prefer the summer season. The summer provides plenty of fresh fruits, sun, warm weather and ice cream. But autumn also offers a lot of nice things. In addition to the colorful leaves, scarves and cozy sofa days with a warm tea or cocoa, in which, for example, apples, pomegranate, pumpkin and nuts thrive, for me the soup and dessert time begins. It’s easy to combine, for example, apple and pumpkin into a pumpkin apple cream.
It’s perfect as a dessert or for an autumn porridge. It’s so easy to do and so delicious. Well suited in the afternoon as a small treat. So that the autumn blues on dark days has no chance!
Preparing time: 30 minutes + at least 1 hour cooling time
Ingredients for 4 persons:
- 350 g hokkaido pumpkin
- 500 g apples
- 1 organic orange
- 150 ml apple juice
- 2 tbsp brown sugar
- A pinch of bourbon vanilla
- A pinch of ground cardamom
- A half cinnamon stick
- 1 star anise
- 2 tbsp brown rum
- 1 pinch of salt
- 125 ml cream
For the topping
- cinnamon
- 75 ml cream
- grapes
- roasted nuts or pumpkin seeds
Preparing
- At first wash the hokkaido pumpkin and cut him into pieces. Remove the seeds with a spoon and cut into small pieces
- Wash and quarter the apples. Remove the core of the apples and cut in small pieces too.
- Mix the apple juice with the pumpkin and apple pieces add sugar, bourbon vanilla, cinnamon stick, cardamom, star anise, rum and salt. Fill it up in a pot.
- Grind about half a teaspoon of orange peel and squizze the orange for orange juice. (You need about 50 ml juice.) Add both to the pot. Stir everything well.
- Boil the mixture briefly and let it cook softly for about 12 – 15 minutes at low temperature. Stir everything again and again so that nothing burns.
- Take the cinnamon stick and star anise out and purée the mass. After that keep the mass cold for at least 1 hour.
- In the meantime roast the nuts or the seeds in a pan.
- Before you serving beat the cream stiff and add with a fork under the mixture. Fill up in jars and dust it with cinnamon. Decorate with grapes and roasted nuts or seeds and enjoy it cold.
